Sauteed Zucchini over Spaghetti
Zucchini. 2- medium, washed and sliced about 14 to 1/8 inch thick
Yellow Summer Squash, 1-medium
Sweet or Yellow Onion, 1-medium or large
Olive Oil, ¼ cup
Salt, Black Pepper or Cracked Red Pepper, to taste.
Spaghetti (or pasta of choice), 1-pound
Cheese Parmesan or Romano, grate over pasta.
Peel and slice Onion into thin slices. Wash Zucchini, and slice into about ¼ – inch thick (to preference).
Fill pot with water (a pinch of salt if desired) and place on stove over medium heat. Cook or saute* the vegetables as you wait for the water to boil and before putting in the pasta.
To cook the vegetables, heat oil in a frying pan. Add the sliced onions and saute or brown until translucent Then add zucchini and saute until tender.
When the water boils add the pasta.
Add salt and black or cracked red pepper to taste. If you need more liquid, you can add ¼ cup chicken broth or water from the pasta after boiling.
Drain Pasta and put in large bowl. Toss in the zucchini onion mixture and add grated cheese as desired in large bowl or in your dish.
