1 pound, beef round, cut into strips (pre-cut and packaged from butcher, meat market or supermarket)

4 bell peppers. I like the variety pack with one orange, red, yellow and green pepper

3 medium yellow onions

1 garlic clove, chopped.

1 teaspoon, chili powder 

1 – 2 teaspoons, steak seasoning mix

2 Tablespoons cilantro, chopped fresh  

1 Tablespoon, vegetable oil

1 cup chicken or beef Broth, low-fat, low sodium

Serve with tortilla’s, salsa, non-fat Greek yogurt

Equipment: A non-stick pan, sharp knife, cutting board, measuring cup, measuring spoons, and one bowl

Steps: 
Saute peppers and onions
         Saute in non-stick pan peppers and onions

Wash peppers and onions. Remove seeds and slice peppers into ¼ inch strips. Peel onion and slice into ¼ inch strips.  Heat Oil in pan and saute peppers and onions.

In a bowl toss or rub the steak seasoning and Chile powder and garlic onto the beef strips. Add ½ cup chicken broth.

Add the seasoned beef strips to the cooked peppers and onions. Add remaining chicken broth and cook until meat is tender.

Servings: 8 fajitas.

Place in tortilla and fold. Serve with Salsa and nonfat plain Greek yogurt.
