BARBARA’S TIP OF THE WEEK

Sauce-y Sunday! Make a large pot of tomato sauce on Sunday or over the weekend. Freeze small containers, keep one in the fridge and you will be set for at least two meals during the week. Marinara or Meat, the sauce is a good base to start any meal. Use over pasta, rice, make chicken or eggplant parmesan! Make sauce with meatballs and that’s yet another meal! Serve with a leafy green salad. It is rich in the carotenoid lycopene, a powerful antioxidant shown to be protective against prostate cancer and cardiovascular disease (use low sodium varieties if watching your salt intake).
